Talk of a stove ban sparks debate about which cooks better"},"content":{"rendered":"<p><strong>By David R Baker and Immanual John Milton | Bloomberg<\/strong><\/p>\n<p>The controversy erupting from mere talk of <a href=\"https:\/\/www.mercurynews.com\/2023\/01\/09\/us-safety-agency-to-consider-ban-on-gas-stoves-amid-health-fears\/\">banning gas stoves<\/a> has sparked a culture war that\u2019s about more than politics\u2014 it\u2019s about food. And it boils down to one question: Which cooks better, gas or electric?<\/p>\n<p>For most home chefs forced to choose between gas ranges that heat quickly\u00a0or electric-coil stoves that are inefficient and ugly, the answer is simple: gas.\u00a0But there\u2019s a third option: induction stoves, which heat with a tightly controlled magnetic field rather than a flame.<\/p>\n<p>On this, even professional\u00a0chefs are divided.\u00a0California chef Andrew Gruel, who owns American Gravy Restaurant Group, says induction stoves are \u201cjust less efficient\u201d than gas ranges. But Chef Rachelle Boucher, of the Building Decarbonization Coalition, says: \u201cI can boil water or sear a steak or cook something twice as fast on induction.\u201d<\/p>\n<p>What they can agree on is that cooking is an emotional topic.<\/p>\n<p>\u201cWhen it comes to cultural topics that are close to our hearts and stomachs \u2014\u00a0mine are one and the same \u2014\u00a0people have some pretty big opinions,\u201d Gruel said.<\/p>\n<p>The issue raises some genuine cultural questions, too. For instance:\u00a0Can authentic Chinese food be cooked without a flame or a wok?
